On this day, we had the opportunity to learn about how to get our kiddos involved in the kitchen. We had the opportunity to prepare a chili meal. And we learned about minimal meal prep ideas. Below, you'll be able to find the chili recipe, meal prep ideas and resources that will help you and your child meal prep together!

Vegan Chili Recipe

Ingredients:

  • 1 medium onion, chopped

  • 1 medium green pepper, chopped into small pieces

  • 4 cloves of garlic, pressed (or finely minced)

  • 3 cups of vegetable broth

  • 1ct 15 ounce can of tomato sauce

  • 1ct 15 ounce can of diced tomatoes

  • 1ct 15 ounce can of kidney beans, drained and rinsed

  • 1ct 15 ounce can of great northern beans, drained and rinsed

  • 1ct 15 ounce can of black beans, drained and rinsed

  • 1ct tablespoon baking cocoa

  • 1/2 teaspoon of black pepper

  • 1/2 teaspoon of chili powder

  • 1/2 teaspoon of oregano

  • 1/8 teaspoon of cayenne pepper

  • 1 cup of frozen corn (added in later)

  • Salt and other spices to taste


Instructions:

Label your gallon bag with:

  • the recipe name

  • cooking instructions

  • the date made


In your gallon bag, add all of the ingredients MINUS the corn and broth (or water is you are using boullion cubes).


You may freeze this for up to 3 months.


A day before making the chili thaw in the refrigerator.


Add the contents of the bag and the broth to your slow cooker and cook for 2-3 hours on HIGH or 4-5 hours on LOW


30 minutes before serving, add in the corn and allow the chili to continue cooking until the corn is cooked through.


Serve and ENJOY! Store in the fridge in an airtight container for up to a few days


*If you do not have any restrictions you may choose to use a different kind of broth or add cooked ground chicken, turkey or beef to your chili into the freezer bag or on the day of cooking.*
